Makes one double or two single 9" crusts; cut recipe in half for one single crust pie
3/4 cup cold butter
2 cups all purpose flour
1 tsp. salt
4-5 Tbsp. very cold water
Mix the flour and salt together. Cut the butter into 4 pieces and add to the flour. With a fork or pastry blender, cut the butter into the flour until it resembles coarse cornmeal. Add 4 tablespoons of cold water and stir gently until the dough sticks together; add up to an extra tablespoon of water if needed. Turn the dough out onto a lightly floured pastry cloth (a clean pillow case is a good substitute). If making two crusts, divide the dough in half and work with one half at a time.
