1 oz. walnuts
1/4 cup low fat cream cheese
1/4 cup + 2 Tbsp. low fat milk
1 Tbsp. superfine sugar
1/4 tsp. vanilla extract
1/2 oz. dark (70%) chocolate
6 vanilla wafers
1 Tbsp. brown sugar
Toast walnuts until fragrant. Set aside.
Heat milk in a non-stick skillet. Add cream cheese and cook over low heat, stirring occasionally, until sauce is smooth. Stir in sugar and vanilla extract. Keep warm.
Shave or grate chocolate. Break vanilla wafers in half.
Slice bananas into about 20 rounds. Place in a foil lined or non-stick baking pan. Top each round with a sprinkle of brown sugar. Broil, watching carefully, until sugar bubbles.
Stir sauce and add additional milk if needed to thin out. Spoon sauce onto two plates. Sprinkle sauce with most of the grated chocolate, reserving a bit for garnish. Using a fork, draw lines through the hot sauce and chocolate. Arrange bananas atop sauce. Garnish with walnuts, vanilla wafers and reserved chocolate.
