8 beautiful figs
a small chunk of very good hard cheese – dried jack is good, as is manchego, or a nice true parmesan
Wash the figs and split them in half. Place them cut side up on a lined baking sheet. Grate the cheese with your finest cheese grater – a microplane is best. Top each fig half generously with cheese. Broil, about 8 inches from the element, on low until cheese is bubbly. Serve at once.
