1-1/2 cups honey
1/4 cup water
2-1/2 Tbsp. lemon juice
1 Tbsp. sesame seeds – toasted
1-1/2 Tbsp. butter -- melted
1/2 cup tahini paste
Line a cookie sheet with parchment paper and brush with melted butter.
In a large, heavy saucepan, mix honey and water and bring to a boil over low heat. Add sesame seeds and lemon juice and cook mixture until it reaches soft-ball stage, 235° on a candy thermometer.
Remove pan with heat and carefully beat tahini into hot honey mixture. Work quickly and make sure that tahini is thoroughly incorporated. Pour onto cookie sheet and let cool until firm.
