Recipe: Raspberry Poached Pears

This is great over vanilla ice cream, or you can cook pear halves without slicing (increase cooking time to about 12 minutes or until tender) and serve them with berries in the center.


1 slightly firm pear per person
1 can Cascadian Farms Raspberry juice concentrate
Fresh or frozen raspberries (optional)


Peel, core and slice each pear thinly. In a large non-stick or stainless steel skillet, mix equal parts of concentrate and water and heat to boiling. Add pears and cook, covered, until tender, 5-7 minutes. Remove pears from pan. Reduce concentrate over high heat until thick, stirring frequently, 3-4 minutes. Return pears to pan and add raspberries if using. Heat for 1 minute and serve.
