1/2 cup jasmine rice
1 can light unsweetened coconut milk
1-1/4 cups 1% milk
1/2 cup sugar
1/4 tsp. salt
2 tsp. lime zest*
2 Tbsp. fresh lime juice*
*We strongly recommend zesting first and juicing second!
Place rice in bowl and cover with cold water. Let soak for 30 minutes. Drain well. Put rice in a heavy sauce pan with milks, sugar and salt. Stir well to combine. Bring mixture to a simmer and cook over low heat, stirring frequently, for 25 minutes. Remove from heat and stir in lime juice and zest. Pour into serving dish and cool.
