1 Tbsp. Olive Oil
1 onion, diced
2 cloves garlic, diced
1 can (28 oz.) Diced Tomatoes
Drain tomatoes, reserving liquid. In heavy pan, heat olive oil. Add onions and saute until soft, about 3 minutes. Add garlic and cook 1 minute.. Add tomatoes and cook until hot through and starting to soften, about 5 minutes. Add salt and pepper to taste. If sauce seems too dry, add some reserved tomato liquid. Toss with pasta and serve.
Variations: Add with the tomatoes and cook one or more of the following: 1 tsp. dry or 1 Tbsp. fresh herbs (oregano, basil); 1 tsp. red pepper flakes; 1/2 cup pitted olives; 1/2 cup diced vegetable (sweet peppers, celery).
Add after the tomatoes have cooked: 1/4 cup grated parmesan cheese; 1/2 cup cooked meat or meat replacer.
