4 cups navy beans, rinsed and picked over
1 bay leaf
3 cloves garlic
(ham hock or ham chunk)
(1 tsp. salt)
In a large bowl or pot, soak navy beans overnight in enough water to cover by at least 1 inch. Drain beans and rinse. Place in a large pot and add water to cover along with the bay leaf, garlic and either a ham hock or salt. Bring to a boil, then reduce heat to a simmer and cook until beans are tender, 1-2 hours. Remove bay leaf and ham bone, if any, before serving.
