1 lb. (about 2 cups) walnuts or pecans
1 egg white
1/2 cup sugar
1/2 tsp. salt
1/2 tsp. cinnamon
Beat the egg white with 1 tablespoon of water. Mix together the sugar, salt and cinnamon. Dip the nuts into the liquid, then roll them in the spice mixture. Spread on a cookie sheet and bake at 225 degrees for about 1 hour, stirring every 15 minutes. Cool and serve. Store leftovers in the refrigerator.
