Recipe: Luscious Rice

Serves 2.

Ingredients:

1/4 cup pine nuts
1 tsp. olive oil
1/2 onion, thinly sliced
1/4 cup golden raisins
1 cup basmati rice
2 cups veg or chicken broth

Ingredients:

In a heavy-bottomed dry saucepan, toast pine nuts over low heat until browned and fragrant, about 10 minutes – stir once in a while to prevent burning. Remove pinenuts and reserve. Add oil and cook onions until limp, 3-4 minutes. Add rice, raising and broth and bring to a simmer. Cover and turn heat as low as possible. Cook until liquid is absorbed and rice is tender, about 45 minutes. Stir in pine nuts and serve.
