Recipe: Mediterranean Tuna Sandwich

Serves 4.

Ingredients:

1 can water packed tuna, well drained
1/2 cup kalamata olives, pitted and quartered
1/2 cup roasted sweet peppers
1 cup shredded lettuce
1/2 cup finely sliced red onion
1/4 cup good olive oil
2 Tbsp. balsamic vinegar
1/2 tsp. rice syrup
4 rolls or buns (we use Alvarado Street hamburger buns)

Instructions:

Divide tuna between four buns. Top with layers of olives, sweet peppers, lettuce and onion. Mix together olive oil, vinegar and rice syrup; sprinkle liberally over sandwich. Place top on sandwich and press down. Best if allowed to stand for 15 minutes before serving.
