Recipe: Quick Unmeat Potstickers

Makes 16 potstickers.

Ingredients:

TO MAKE FILLING
6 oz. veggie sausage or beef
2 green onions
1 egg
1 tsp. vegetable oil

TO MAKE POTSTICKERS
16 wonton wrappers
1 recipe of filling
oil to coat the bottom of the pan
1/2 cup vegetable broth

Instructions:

TO MAKE FILLING
Wash the green onions and slice them very thinly. Crumble the un-meat until uniform. Mix with egg, green onions and teaspoon of oil.

TO FILL AND COOK POTSTICKERS
Put a wonton skin on a cutting board or clean counter. Wet two edges of the square. Put a “scant” teaspoon of the filling on the dough, fold into a triangle and seal edges well. Turn seam side up and push down gently to flatten bottom.

Heat a big pan over medium high heat. Add enough vegetable oil to coat pan well. Carefully put the potstickers one at a time in the pan so the filling is in the oil and the seam is up in the air. Cook over medium heat until the potstickers are golden brown on the bottom, 2-3 minutes. When all potstickers are well browned, add vegetable broth and cover immediately. Cook 3 minutes. Remove lid and continue to cook until liquid evaporates. Serve at once with soy sauce for dipping.
