Ingredients:
1 lb. dried beans
1 tsp oil
3 cloves garlic, minced
1 large onion, diced
1tsp. salt
1 tsp. red pepper flakes
1 tsp. dried ground cumin
2 tsp. dried oregano
dash of hot pepper sauce
Instructions:
Pick over the beans and soak in water overnight or for 6-8 hours. Drain and rinse thoroughly.
Heat oil in a large saucepan cook onion 5 minutes. Add garlic, salt, red pepper flakes, cumin and oregano and cook 1 minute. Add beans and cover with water 1-2 inches higher than the beans. Simmer 2-3 hours, stirring occasionally and adding water as needed. Add hot pepper sauce at end of if desired
