flour tortillas, 2-3 per person
grated cheese, 1/4 cup per tortilla
As many of the following as you like:
cooked, crumbled ground beef or ground beef alternative
refried beans, warmed
jalapeño, seeded and sliced, or canned
black olives, sliced
sour cream, regular or lower fat
Assemble all ingredients (except tortillas & cheese) in small bowls or on cutting boards.
There are several possible cooking methods, depending on how you like your tortillas and how many people you’re cooking for.
Pan: Heat cast iron skillet. Oil skillet very lightly if needed. Put tortilla in pan and put cheese on top. Cook 2-3 minutes until cheese melts and tortilla lightly browns.
Microwave: Place damp paper towel on microwave safe plate. Place tortilla on top of paper towel. Put cheese on top. Microwave 1 minute on High. Handle carefully!
Oven: (Good for larger families.) Preheat oven to 350º. Line cookie sheet with foil or parchment paper. Place tortillas flat on cookie sheet and top with cheese. Bake about 5 minutes until cheese is melted.
Fill hot cheesy tortillas with your selections & enjoy.
