Recipe: Tamale Casserole

Serves 2.

Ingredients:

2 cups or 1 can plain pinto or other beans
1 onion, sliced thin
1 bell pepper, sliced thin
1/2 cup grated cheese
(1/4 lb. ground un-meat,tofu or beef)
1/2 cup frozen corn
1/3 cup salsa

Topping:
2/3 cup masa*
3 Tbsp. softened butter
1 cup vegetable broth, heated
1/4 tsp. hot pepper sauce

* Masa is corn meal processed with lime. Regular corn meal is not a substitute.

Instructions:

Make topping first. Cream 1/3 of the masa with the butter. Add hot sauce to vegetable broth. Add enough vegetable broth to masa to make a thick batter and beat vigorously. Continue alternating masa and broth until you have a thick but pourable batter. You may not need all the broth, or you may need additional hot water. Masa’s like that.

Grease a casserole dish. Spread beans in the bottom and layer other ingredients on top in the order given, ending with corn. Pour salsa over top. Check topping to make sure it’s still pourable, and add more broth if necessary. Pour/spoon batter over top of casserole. Bake, covered, for 30 minutes at 350°. Uncover and bake an additional 20 minutes until lightly browned. Serve with salsa and sour cream with chips on the side.

Notes:

You could add 1/4 lb of cooked ground beef, tofu or veggie burger to this dish if you like.
