Recipe: Tuna Coffins


1 can tuna
¼ cup finely minced onion
mayonnaise to taste
mustard to taste
4 Alexia whole grain rolls, thawed

cheese, grated (optional)


Mix together tuna, onion, mayo and mustard to make salad. Slice off the flat side of the ciabatta roll. Pull out insides with your fingers (reserve crumbs for another use) to make a shell. Use salad to fill bread shells. Place filled shells, tuna side up, in a small baking dish so they fit snugly into it. Top with cheese. Bake 15 minutes at 350 degrees.
