Recipe: Veggie Burritos

Ingredients:

1/2 cup instant refried beans
1/2 cup boiling water
2 tsp. oil
2 carrots, sliced
1 bell pepper, sliced
1 onion, sliced
10 mushrooms, quartered
2 summer squash, sliced
1/2 a lime
1/2 cup grated cheese
2 large flour tortillas
salsa
sour cream

Instructions:

Place refried bean mix in a heatproof bowl and add water. Stir and let stand, covered, 10 minutes. Heat oil in skillet and fry vegetables in order, adding at 1 minute intervals. When all veg are in pan, cook, stirring, until almost done. Squeeze lime over veg, cover, and let steam 2 minutes. Meanwhile, warm tortillas in pan or microwave and spread each with 1/2 of bean mixture. Divide cheese between tortillas and top with hot vegetables. Add sour cream and salsa to taste, fold and serve.
