Recipe: BBQ Beef Stuffed Potatoes


2 potatoes, baked & cooled
Sour cream
1/2 lb ground beef or substitute
1 clove garlic, minced
1/4 cup catsup
1 Tbsp. brown sugar
1 Tbsp. vinegar
1/8 tsp. ground chipotle chili
1/8 tsp. ground cloves


Slice cold potato in half and scoop out the insides, leaving a good shell in the potato half. Mix the insides with sour cream to make a light texture. Salt and pepper liberally & pile back into the shell. Bake in a 350º oven until hot through. Breaking up & cook ground beef, , until nicely browned. Add garlic and cook 1 minute. Add remaining ingredients and cook gently until thick and fragrant, 2-3 minutes. Top potatoes with beef and serve.
