Choose a small steak (about 4 ounces) per person. Let steaks stand on the counter in their paper wrappings for 1 hour before cooking. Trim excess fat from edges. Put steaks in a rimmed pan (a jelly roll pan, which most people call a cookie sheet, is fine). Sprinkle liberally with granulated garlic and pepper on both sides. Broil about 6” from heating element. Cook 4-6 minutes per side, depending on desired doneness. Let stand 5 minutes, covered, before serving.
