Recipe: Roast Chicken


1 Rosie chicken, 4 or 5 lbs


Calculate cooking time at 20 minutes per pound or fraction thereof, plus 10 minutes of resting time before carving..

Preheat the oven to 350°. Line a roasting pan with foil, and put a baking rack in it. If you don’t have a rack, use a strip of foil about 3 feet long. Crush it into a snake, and form it in the shape of the letter “S”. Put the foil snake in your pan and the chicken on top of it.

Remove the giblet (that paper wrapped bundle) from the chicken. It is not necessary to wash the chicken before roasting it; any contamination present on the surface of the chicken will be killed in a 350° oven, so all washing does is spread the bacteria in your kitchen.

Place the chicken breast side down on the baking rack or foil snake. Put the pan in the oven and bake for 2/3rds of the required time. Turn the chicken breast side up and finish baking. Remove from oven, tent loosely with foil, and let stand 10 minutes before carving. Refrigerate any leftovers promptly, well wrapped.
