1/2 cup sour cream
1/2 cup milk
3 Tbsp. minced shallot
4-6 oz. Pt. Reyes Original Blue, crumbled
fresh ground pepper to taste (be generous!)
Thoroughly mix the sour cream, milk and shallot. Add the blue cheese. You can serve this at once, but it’s better if it sits – even overnight in the fridge. You may need to adjust amounts of sour cream and milk to get the consistency you like best.
