Recipe: Better Slaw


3 cups shredded spinach
3 cups shredded purple cabbage
1 cup shredded carrot*
1 cup shredded cucumber*
1/2 cup red onion, very thinly sliced

For dressing:
1/2 cup silken tofu
1 tsp. rice syrup
1 tsp. granulated garlic
1 tsp. prepared mustard
1 Tbsp. lemon juice
salt and pepper to taste


Mix together shredded vegetables. Blend dressing ingredients. Toss together immediately before serving.

*To shred carrots and cucumber, use a vegetable peeler to pare off long strips, then cut to manageable lengths. Neither carrot nor cucumber skins add a lot to this dish.
