Recipe: Couscous & Roasted Vegetable Salad

Ingredients:

1 ¼  cups water
½ tsp. salt
1 cup couscous
3 cups roasted vegetables
cheese, nuts, meat – whatever you have
salad dressing to taste

Instructions:

Bring water to a boil.  Add couscous and let stand, covered, 5 minutes.  Fluff with a fork. Cut roasted vegetables into bite-sized pieces and add to couscous. Add any other nice things you have and salad dressing to taste.
