Recipe: Garden Couscous Salad

Makes 4 servings.

Instructions:

1 cup plus 2 Tbsp. water
1/2 tsp. salt
1 cup whole wheat couscous
2 Tbsp. Italian parsley, chopped
12 kalamata olives, chopped
1 small cucumber, chopped
1 cup any vegetable(s), chopped
1/4 cup crumbled feta cheese
1/4 cup vinegar & oil salad dressing

Instructions:

Bring water to a boil; add salt. Pour over couscous and let stand, covered, 10 minutes while you chop vegetables. Add other ingredients. Toss well. Serve warm or refrigerate to serve later.
