Recipe: Rice Salad

Ingredients:

2 cups uncooked rice
1 tsp. salt
1/2 cup pecans
1/2 cup roasted bell peppers, cut into strips
1/4 cup golden raisins
1/4 cup olive oil
3 Tbsp. balsamic vinegar
1 clove garlic
1 Tbsp. soy sauce

Instructions:

Bring a large pot of water to a boil. Add 1 tsp. salt. Add the rice and cook until tender. Drain and rinse immediately with cold water. Let drain thoroughly. Place vinegar, soy sauce and crushed garlic in a bowl. Whisk in olive oil a little at a time to form a dressing. Mix rice, peppers, pecans and raisins. Add dressing a little at a time – you may not need all of it.
