Recipe: Warm Stir Fry Salad

Ingredients:

1/4 cup slivered almonds
1/2 Tbsp. sesame oil
1/4 lb. trumpet mushrooms
2 garlic cloves, minced
1 tsp. minced ginger
1 Tbsp. lime juice
1 Tbsp. Tamari
3 quarts stir fry greens
salt to taste
(1 tsp. toasted sesame oil)
(1/2 tsp. red pepper flakes)

Instructions:

Clean mushrooms and cut into bite sized chunks. Wash greens. Toast the almonds, then set aside. In the same pan, sauté mushrooms in sesame oil until tender. Add garlic and ginger and cook 1 minute more. Set aside. Deglaze hot pan with lime juice and ginger. Add greens and cook, covered, 5 minutes. Return mushrooms and almonds to pan. Add sesame oil, red pepper flakes and salt to taste.
