Mojo is the ketchup of Cuba. A mojo is made fresh in the morning and left out on the table, where it is put on everything that is eaten in the house that day.
2 limes, zest and pulp
1/2 cup rice wine vinegar
2 Tbsp. ginger, peeled and grated
2 cloves garlic, chopped
3 Tbsp. honey
1 cup vegetable oil
salt and white pepper to taste
Heat oil in a heavy-bottomed saucepan. Bring oil up to sauté temperature and add the garlic and ginger. Let simmer until garlic starts to brown. Slowly and carefully add the remaining ingredients with the saucepan off the heat. Let cool down at room temperature so flavors will incorporate.
