Recipe: Chapati

Chapati is nice as a quick bread, since it doesn’t heat up the kitchen much. If you want a quicker solution, tortilla chips will do.


1 cup whole wheat flour
1/3 cup warm water
2 tsp. oil
1/2 tsp. salt


Place flour in mesh strainer and shake to remove big chunks of bran. Stir in salt. Make well in flour and add water and oil. Mix well and knead for 2-3 minutes. Cover and let stand for 1 hour. Divide dough into 12 pieces. Make each piece into a ball. Roll out to the size of a saucer.

Heat a heavy griddle. Cook each round until brown and puffy, 2-3 minutes each side. Keep warm in a tea towel while cooking remaining bread.
