Recipe: Chili Dip

Vegetarian.

Ingredients:

2 cups grated sharp Cheddar
2 cups grated Jack
2 Tbsp. all-purpose flour
1 Tbsp. oil
3/4 cup beer
1/2 cup tomatoes, chopped finely
1 jalapeño chili, minced (wear rubber gloves)
1 bunch green onions, white and tender green parts chopped finely

Instructions:

Toss the cheeses with the flour and set aside. In a large, heavy saucepan, cook the tomatoes in the oil over moderately low heat, stirring, for 2 minutes. Add the beer and the jalapeño, and simmer the mixture for 5 minutes. Add the green onions. Add the cheese mixture by 1/2 cupfuls to the beer mixture, stirring after each addition until the cheeses are melted. Serve with tortilla chips.
