Recipe: Fresh Ricotta Spread

Ingredients:

1 garlic clove, peeled
1/2 cup walnuts
1 Tbsp. extra-virgin olive oil
1 cup whole-milk ricotta cheese
3 Tbsp. fresh lemon juice
1-1/2 tsp. (packed) finely grated lemon peel
3 Tbsp. freshly grated hard cheese cheese
1-1/2 cups coarsely chopped marinated artichoke hearts

Instructions:

In a food processor, whirl together first 7 ingredients until creamy. Stir in artichoke hearts. Let stand 10 minutes. Add salt or more lemon as needed. Serve as a spread, or use as a pasta sauce.
