Recipe: Ramen with Tofu and Vegetables


2 packages ramen
1 tsp. oil
6 shitake mushrooms
1 clove garlic
1 carrot
3 green onions
1/2 cup bean sprouts
5 oz. firm tofu, cubed
(hot chili oil)
(sesame oil)


Cook ramen according to package directions. While ramen cooks, slice mushrooms and fry in oil until tender. Add garlic, stir, and turn off heat. Use a vegetable peeler to make long strips of carrot. Add carrot, green onions, and sprouts to ramen and cook until tender. Stir in tofu and mushrooms. Season to taste with chili and/or sesame oil.
