Recipe: Fresh Cranberry Sauce



2 cups water
2 cups sugar
4 cups cranberries: 1lb.
2 tsp. grated orange rind


Place water and sugar in a saucepan and stir until the sugar is dissolved. Boil the syrup gently for 5 minutes. Pick over, and wash the cranberries. Add to syrup and simmer the berries in the syrup uncovered, very gently, without stirring, until they are translucent, about 5 minutes. Skim off any foam. Add grated orange rind. Pour the berries into 1 larger or several individual molds which have been rinsed in cold water. Chill until firm. Unmold to serve.
