Recipe: Tofu Pumpkin Pie

Makes 1 9-inch single-crust Pie


18 oz. Silken Lite Extra Firm Tofu
2 cups canned or cooked pumpkin
2/3 cup honey or maple syrup*
1 tsp. vanilla
1-1/2 tsp. ground cinnamon
3/4 tsp. ground ginger
1/4 tsp. ground nutmeg
1/4 tsp. ground cloves


Blend tofu with a stick blender or in a food processor until smooth. Add remaining ingredients and blend well. Pour into unbaked pie crust. Bake in preheated 350° oven for about 1 hour. Chill at least two hours and serve. Filling will be soft, but will firm as it chills

*Recipe is best with honey, but maple syrup may be used.
