Recipe: Baked Potatoes

I think that baked potatoes with a good topping and another vegetable on the side make a fine dinner. You may prefer to add protein to the menu. A very small steak, fish or a veggie burger would be easy.

Ingredients:

1or 2 russet potatoes per person

Toppings for Baked Potatoes:
Butter, of course
Sour Cream, slightly lower in fat than butter
Cheese, grated
Broccoli, steamed (good with cheese)
Chili, leftover or canned, heated
Bacon, real or fake, cooked until crisp
Packaged Indian vegetables (we like Tasty Bite)

Instructions:

Wash potatoes. Poke several times with a fork. Place in oven and set temperature to 350°. Bake 30 minutes. Turn potatoes over. Bake another 45 minutes. Serve at once with toppings.
