1 Tbsp. olive oil
1 10 oz. package frozen spinach
1 Tbsp. white flour
1/4 tsp. salt
1/4 tsp. nutmeg
1/3 cup oat or unsweetened soy milk
1/4 cup grated cheese or substitute
Heat a small, fairly deep skillet with a lid. Mix flour, nutmeg and salt together. Add oil to skillet and sprinkle in flour. Cook, stirring, for 1 minute. Add milk and stir well. Let cook until slightly thickened, 2-3 minutes. Squeeze excess liquid out of thawed spinach. Add to sauce, stir, and cook covered for 2-3 minutes. Stir in cheese and serve at once.
Using non-dairy “milk” lowers the fat & cholesterol in this take on a traditional side dish.
