Serves 2.
Ingredients:
2 medium russet potatoes
1 onion, diced
1/4 tsp. finely chopped ginger
3 cloves garlic, minced
2 medium tomatoes, peeled and diced
1-4 tsp. curry powder
2 Tbsp. vegetable oil
salt to taste
Instructions:
Cook whole potatoes in boiling water until barely tender. Let cool slightly and cut into cubes.
Heat a large skillet over medium heat. Add oil and sauté onions until barely tender, 2-3 minutes. Reduce heat and add curry powder (1 Tbs. = mild, 2 Tbs. = medium, 3 Tbs. = Hot, 4 Tbs. = very hot) ginger and garlic. Cook, stirring frequently, 2 minutes. Add tomatoes and potatoes and cook about 4 minutes.
