2 large russet potatoes
2 Tbsp. 1/2 & 1/2 or substitute
1 Tbsp. butter or substitute, melted
Scrub, peel and cut potatoes into large chunks. Cover with cold water and bring to a boil. Cook gently until potatoes are just tender, 20-30 minutes. Drain potatoes and return to pan. Let stand uncovered 2 minutes. Mash with potato masher or whip in bowl of standing mixer until fairly smooth. Add 1/2 & 1/2 and melted butter and continue mashing or whipping until you’re satisfied.
