5 large russet potatoes
1/4 cup half & half or substitute
2 Tbsp. butter, melted
Scrub, peel and cut potatoes into large chunks. Cover with cold water, add 1/4 tsp. salt if you like, and bring to a boil. Cook gently until potatoes are just tender, 20-30 minutes. Drain potatoes and return to pan. Let stand uncovered 2 minutes. Mash with potato masher or whip in bowl of standing mixer until fairly smooth. Add half & half and melted butter and continue mashing or whipping until you’re satisfied.
