Recipe: Stuffed Mushrooms - #3


12 small white mushrooms
1 Santa Fe Gardenburger patty, thawed
2 Tbsp. egg white
1 Tbsp. finely chopped onion
2 Tbsp. dry bread crumbs
Olive oil


Preheat oven to 350°. Wash mushrooms and pop out stems. Rub mushrooms with olive oil. Crumble GardenBurger. Add breadcrumbs, onions, egg and 1 Tbsp. olive oil and mix well. Mound filling into mushroom cavities and place in baking pan filling side up. Bake 25 minutes, until mushrooms are cooked through and filling is browned. Serve hot.

We chose Santa Fe Gardenburger patties because they’re high in fiber and low in fat, with a good flavor. Other brands & varieties will work, just watch the fat content.

Commercial bread crumbs usually contain hydrogenated oil. Choose a natural foods brand, or make your own.
