Recipe: Berry Cobbler


1/4 cup butter
1 cup all purpose flour
1 cup sugar
3/4 cup milk
2 tsp. baking powder
1/4 tsp. salt
2 (10 oz) bags frozen blueberries or mixed berries, thawed and drained
2 tsp. finely chopped crystallized ginger, if desired


Heat oven to 350°. In an 8x8 baking dish in oven, melt butter. Stir together flour, sugar, milk, baking powder and salt in a medium bowl. Pour batter into baking dish without mixing with butter. Pour berries over batter; sprinkle with ginger. Bake, uncovered, 55 to 60 minutes or until top is golden brown.
