Recipe: Double Chocolate Cherry Cookies

Makes 2 dozen.


1 cup flour
1/3 cup cocoa powder
1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt

1/3 cup butter
1 cup sugar
1 tsp. vanilla
1 egg

1 cup dried cherries
1/3 cup chocolate chips


Preheat oven to 350°. Mix together the dry ingredients. Cream butter with sugar, vanilla and egg until fluffy. Stir dry into wet. Add goodies and mix well. (Kneading with clean damp hands works best.) Spoon out onto parchment – these won’t spread much at all. Bake exactly 12 minutes, swapping cookie sheets once during baking. They won’t look quite done when you take them out, but will finish cooking if you allow them to stand on the hot cookie sheet for 5 minutes.
