Recipe: Fresh Fruit Tart


1 cup cookie or graham cracker crumbs
2 Tbsp. melted butter or healthy margarine
1 package silken tofu
1 package vanilla tofu pudding mix
2 cups any fruit, sliced thin
2 Tbsp. marmalade or jelly
4 Tbsp. lime juice


Mix together cookie crumbs and butter and press into bottom of 9” removable bottom tart pan. Place in freezer while you make pudding. Make tofu pudding according to package directions. Spoon into crust. Slice fruit and toss with half of lime juice. Arrange atop pudding. Mix remaining lime juice and marmalade. Heat briefly in microwave or pan of hot water. Spoon over fruit. Chill at least 1 hour before serving.
