Recipe: Fruit Grunt

Serves 6.


2 Tbsp. cornstarch
1/2 cup water
2 Apples, chopped
2 Pears, chopped
2 bags frozen tart cherries
3/4 cup brown sugar
1/2 cup orange juice

1/2 cup all purpose flour
1/2 cup whole wheat flour
2 tsp. baking powder
1/4 tsp. salt
1/2 cup milk
1/4 cup white sugar
1/2 tsp. cinnamon


Whisk corn starch into water – make sure there aren’t any lumps. Combine all fruit, sugar, water and juice into a deep skillet. Cook over medium heat, covered, while mixing dough.

Mix together flours, baking powder and salt. Stir in milk to make a dough. Roll or flatten dough to 1/2” thick. Cut out about 25 little rounds. Mix together the white sugar and cinnamon. Dip one side of each round into the cinnamon mixture. Place the rounds, cinnamon side up, carefully on top of the gently simmering fruit. Cook uncovered for ten minutes and then covered for another ten minutes; or until dumplings are cooked through.
