Recipe: Riz Biscuits

Makes 24-30 biscuits.


2 tsp. yeast
1 tsp. sugar
1/4 cup warm water
2-1/2 cups flour
1 tsp. baking powder
1/4 tsp. salt
1 cup milk (dairy or non-dairy, any fat content)
1/4 cup olive oil


Preheat electric skillet to 300º.

Dissolve yeast and sugar in warm water.

Mix the dry ingredients together. Make a well in the middle and stir in yeast, milk and olive oil. Mix well.

Place the dough on a floured surface and knead a little until firm enough to handle, adding flour if needed (only a little, you don't want it too stiff). Roll out to exactly precisely 3/4 inch thick. Cut into square biscuits with a bench knife.

If your electric skillet is not non-stick, grease it with a little olive oil. Place your biscuits in the skillet, leaving a little room between each so they have room to rise and expand. Cook with the lid ajar for 5 minutes. Turn the biscuits over, place the lid on the skillet to cover and cook an additional 5 minutes. Turn the skillet off and serve.
