Recipe: Bride’s Bread Scrapple

Serves 2.


1 sausage
1 onion
3 cups vegetables, cut nicely
2 cups stale bread cubes
good olive oil
milk or broth


Take the sausage out of its casing, break into bite-sized pieces and cook in a large skillet until done. Remove from pan and reserve. In same pan, adding oil as needed, cook onion. Add vegetables in the order they need to cook – long-cooking vegetables first, tender veg last. When the last vegetable is almost tender, push all the veg to the side. Oil the middle of the pan and add bread. Toss to coat, adding more oil as needed. Mix bread into veg and let cook for 2-3 minutes. Add milk or broth if needed to soften bread and bind.
