1 stick unsalted butter, softened but not warm
1/4 cup finely grated mozzarella
1/4 cup finely grated smoked gouda
4 slices good bread
Mash together butter and cheeses. Spread lightly on toasted bread. Place cheese toast on baking sheet and run under broiler until cheese is melted and bubbly. Cut into “soldiers” and serve with soup.
