Recipe: Denver Omelet


1/2 a bell pepper, diced
3 green onions, sliced
4 oz ham, cubed
5 eggs
2 tsp. butter
1 cup grated cheese
1 avocado, diced


Cook pepper in omelet pan until tender. Set aside. Beat eggs lightly with 1 tsp. water. Heat skillet and add 1 tsp. butter. When butter melts, pour in half of eggs. Cook over medium heat. As eggs set, lift edges of omelet and let uncooked egg run underneath. When omelet is set, reduce heat to low and put half of cheese on top. Cook 1-2 minutes until cheese starts to melt. Add half of avocado, ham, onions & peppers. Loosen edges of omelet and slide on to plate, folding omelet in half as you do so. Top with salsa. Repeat to make second omelet. Top with sour cream.
