Recipe: President Grant’s Potomac Pancakes

President Grant liked these with a slice of ham on top, but we just like them plain. They’d also be good with some yogurt and fruit.

Makes 36 tiny pancakes


4 large apples
1 cup whole wheat flour
1 Tbsp. brown sugar
1/2 cup sour milk (add 1/2 tsp. cider vinegar to milk to sour)
3 egg yolks
1 Tbsp. melted butter
1 tsp. vanilla


Wash, core & cut up the apples (we used 2 winesaps and 2 gala apples). Put them in a pan with about an inch of water and cook over medium high heat until soft, about 10 minutes. Let cool briefly, then put through a ricer or food mill. Mix the milk, eggs, melted butter and vanilla together. Add the flour and sugar. Mix thoroughly. Stir in the apples. Heat up a large, heavy skillet and add just a tiny bit of butter or oil to the pan. Drop the batter by the tablespoon into the pan to make little cakes and cook until golden brown (about 1 minute). Turn and cook another minute.
