Recipe: Couscous d’Oro


1-1/4 cups water
1/2 tsp. salt
1 cup whole wheat couscous
1/2 cup golden raisins
2 apples
1 tsp. lemon juice
1/2 cup slivered almonds
1 to 2 Tbsp. crystallized ginger


Bring water to a boil. Add couscous and let stand, covered, 5 minutes. Fluff with a fork, then chill. While couscous stands, core and cube apples. Fill a bowl with cold water and add lemon juice. Add apples. Finely chop ginger. When couscous is cool, drain apples. Stir apples, ginger and nuts into couscous and serve.
