Recipe: Mediterranean Couscous


2 cups water
1/2 tsp. salt
1-1/2 cups couscous
1/4 cup golden raisins
1/4 cup pine nuts
4 green onions, thinly sliced
3 Tbsp. olive oil
3 Tbsp. white wine vinegar
4 Tbsp. mint, chopped


Bring water to a boil; add salt. Add couscous and raisins and let stand, covered, 5 minutes. Put pine nuts in a non-stick skillet over low heat and toast, shaking often, until golden brown. Put vinegar in a small bowl. Using a fork, beat in oil a little at a time. Fluff couscous with a fork and transfer to a large bowl. Add pine nuts and green onions. Stir mint in to dressing, and add dressing to couscous. Toss well. Serve warm or refrigerate to serve later.
